ONE POT RECIPE
4 servings.
INGREDIENTS:

2 1/2 dl quinoa
-
5 dl vegetable broth
-
2 dl coconut milk
-
1 onion, finely chopped
-
2 cloves of garlic, finely grated

1 large sweet potato, diced
- 1 aubergine, i tern
- 200 g fresh spinach
- 1 tsp. curry
- 1 tsp. Brain blend
- 1 tsp. ground cumin
- 1 tsp. fennel seeds
- Coconut oil for frying
- Salt & pepper
- Topping: Coconut flakes, chilli and possibly fresh cilantro (can be omitted)
COURSE OF ACTION:
Heat a pan to medium heat, melt the coconut oil and fry the onion, garlic, sweet potato and aubergine stir for 5 min. Add all the spices and stir it together with the vegetables.
Rinse the quinoa thoroughly and put it in the pot together with the vegetable broth. Bring it to a boil and leave simmer for 15 min. Add coconutmilk and spinach. When the spinach is when it has collapsed, season with salt and pepper.
Arrange in bowls and garnish if necessary. with toppings.
