When the sun is shining it calls for ice cream.
I played in the kitchen and made an incredibly delicious ice cream with it Chai blend, which I would like to share with you here.
It is vegan, gluten-free and without refined sugar.
CHAT IS RECIPE:
For 2 people.
- 1 can of coconut milk (I love Änglamark's eco)
- 4 tbsp. coconut sugar
- 3 tbsp. nut butter (e.g. Cashew butter or almond butter)
- 1 1/2 tbsp. lecithin (gives a delicious creamy texture)
2 tsp. Chai blend
COURSE OF ACTION:
Blend all ingredients in a blender to a creamy consistency. And if you are the lucky owner of an ice cream machine, you put everything in there and let it run for 20-25 minutes. Follow the instructions on the machine.
If you don't have an ice cream maker, you can put the ice cream in ice molds and freeze. Or in a larger container, but here must be stirred for approx. every 30 min.
Enjoy when it's cold and ready!

Chai blend is used for Chai latte, which can be enjoyed hot, cold and added to baked goods and ice cream.
